Green Goddess Steak Salad

I am so fortunate to have a childhood friend who is still by my side after so many years. KC has always been an inspiration in the kitchen. She has the ability to throw together a beautiful and healthy meal out of a random assortment of things in the fridge, garden and pantry. Kind of like Master Chef or an episode of Chopped.

 

I asked KC to help me develop a healthy steak salad with our beef as we prepared for a beef recipe photoshoot. Boy, did she deliver on an amazing "green goddess" dressing that paired wonderfully with a Traeger smoked and seared London broil.

 

This is a wonderful recipe to grill during summer BBQs, 4th of July and family gatherings around the pool, beach, campfire or lake.

Here is how KC prepared the London broil:

We used about a 5-6lb London broil was just seasoned with salt & pepper. Smoke on the Traeger at 225 until internal temperature of the meat is at 120. Pull the steak and rest for 10-15 mins. While resting, crank the heat on the Traeger to 500 and sear the steak for 60-75 seconds each side. Pull the steak and rest again for 10-15 mins prior to slicing.

Salad prep:

-1 bundle of fresh kale or other desired lettuce. We used kale so the salad keeps well. It was delicious!

-1 cup of thinly sliced red cabbage

Toppings for salad:

-Sliced heirloom cherry tomatoes

-Sliced blood oranges

-Chopped macadamia nuts

Green Goddess Dressing:

-1 bushel parsely

-1 bushel cilantro

-1 bunch of green onions

-1 avocado

-2-3 cloves of garlic

-1 tsp salt

-Juice of 2 oranges

-1/2 can of coconut milk (we like to buy in bulk as we enjoy using coconut milk in a lot of recipes!)

-handful of macadamia nuts toasted and salted (try this brand from Amazon!)

-1 tsp salt

Blend all ingredients together in a Vitamix (I don't know what I'd do without this!) or a food processor. Use the dressing as desired! Works wonders as a dipping sauce for steak or a marinade for any protein.
